Chateau Romassan is located in the Bandol appellation where the land is comprised of limestone, sandstone and marl of the late Cretaceous marine period. These poor soils are offset by the large amount of stone in the soils throughout this appellation. From the vineyards in Coudray-Macouard, the Cabernet Franc is planted on chalky-clay soil. The harvest yielded 60 hl/ha and was fully destemmed before a gentle pressing. Maceration was undertaken for 12 to 24 hours to obtain colour and body before fermentation at controlled temperatures to preserve the fresh fruit aromas. Filtration was through kieselguhr (a naturally occurring, soft, chalk-like sedimentary rock that is easily crumbled into a fine white to off-white powder), and the wine was cooled before bottling to avoid the formation of tartaric crystals.
