The champagne is light gold with fine bubbles. The nose initially reveals notes of violets, brioche, toast and almonds which then gain subtle tones of leather and iodine - a characteristic of Chardonnays and signifying the mature development of this vintage. The palate demonstrates a balance of fullness and strength, dominated by fresh fruit with hints of violets and aniseed. Very elegant on its own, this Chardonnay will pair beautifully with seafood. Vintage champagne is by definition the wine of a single year and it must rely on the success of that harvest alone. Vintage champagne is therefore produced only when all the necessary components of climate, grape quality and ripeness at harvest come together for the winemaker to produce a wine of optimum intensity, structure and balance. The 'Blanc de Blancs' vinified 100% from Chardonnay grapes selected from Grand Cru vineyards (many owned by Pol Roger) in the Cote des Blancs: Cramant, Le Mesnil, Oger, Avize and Oiry. The Blanc de Blancs, as with all the other Pol Roger wines, undergoes th traditional hand remuage. The growing season of 1999 was characterised by exceptional warmth and rain, with some heavy hail in May which devastated the vines in some communes. Growth was vigorous, necessitating some green pruning. Despite the intense summer heat, the grapes were in good condition at harvest time which opened on 19th September and closed 1st October. Fortunately the heavy rain which fell at times during this period did not spoil a record harvest (19,000 kg/ha) with a good maturity (9.9% vol). polroger
